Amaranth grain has a distinctive earthy flavour with a nutty sweetness and gelatinous consistency perfect in porridge or soup.
Once the staple of the Aztecs, amaranth is a nutritious gluten-free ingredient with a fibre and protein content to be proud of. Unlike most grains, amaranth contains all nine amino acids, including methionine and lysine. Lysine plays a key role in the formation of collagen, while methionine help maintain healthy liver function.
Amaranth grain tastes great hot or cold, in starters, mains or desserts. It works perfectly as an ingredient in your porridge, salad or soup.
Put 1 cup amaranth grain and 3 cups cold water in a saucepan to make 3 cups cooked amaranth. Bring to a boil, then reduce heat and simmer, uncovered, until water is absorbed, for approx. 20 mins.
Store in a cool, dry place.
